Italian Regional Cooking with Debe Averill… week 1

In the first week of our cooking class Debe focused on the cuisine of Northern Italy… Piemonte, Lombardia, and Alto Adige. My job was to bring the appropriate wines to pair with the menu, which, for the most part, I did. Okay, my slight deviation from the program was this… I really wanted to bring some Prosecco. Prosecco is the greeting wine of Northern Italy. It is light, bubbly,and fruity…a great way to start any evening, and I thought, since Debe would be using some Prosecco in our desert recipe,that it would be the perfect way to start our first cooking class. So, we started with 2012 Adriano Adami “Garbel” Prosecco, delicious… and then we paired our second wine, the 2011 Vietti Roero Arneis with assorted meats and cheeses, Sweet & Sour Onions on Crostini, Vegatable Strudel, Artichoke & Walnut Olivado and Terni Bread that we would be making later in the evening. Our Primi course, Saffron Risotto with Sauteed Sausage & Kale paired perfectly with the 2011 Turina Goppello Garda Classico, a soft light red from Lombardia. Then, for the Secondi course, we made Porcini Stuffed Chicken Breasts and Buckwheat Crespelle with Apples and Gorgonzola Cream Sauce…deliciously paired with the 2010 Vietti “Tre Vigne” Barbera d’ Asti. We cleansed our palates with a very tasty Carrot, Fennel, Apple & Raisin Salad…and for you fans of the Dolce…we made Prosecco Zabaglione and a Pine Nut, Honey & Anise tart…a great way to end our first week of cooking class…if you are interested in future classes contact Debe… marketchef@gmail.com
